  • 1 cup unsalted butter, at room temperature
  • ¾ cup sugar
  • 1 large egg
  • ¼ cup freshly squeezed lemon juice
  • 2 ¼ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 heaping cup fresh strawberries, cored and finely diced

Strawberry Lemon Glaze:

  • 1 ¼ cups icing sugar, spooned and measured, then sifted (optional)
  • 2 ½ tablespoons milk or heavy cream
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon freshly squeezed lemon juice
  • 3 tablespoons strawberry purée (from approx. 12 large strawberries)

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Line a 9×9-inch baking dish with parchment paper, leaving an overhang for easy removal.
  2. Cream butter and sugar: In a large bowl, beat together the softened butter and sugar until light and fluffy. Add the egg and beat until combined, then mix in the lemon juice.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined and no dry flour remains.
